Australia-born Shayne Vaughan is Caliza's new Executive Chef and Jaie O’Banner is the restaurant's new General Manager. Caliza officially re-opened for the 2010 season on Wednesday, March 3.

Breakfast Now On the Menu at Fish Out of Water Morning diners no longer have to wait until dinner to enjoy its AAA Four Diamond cuisine. Fish Out of Water Restaurant inside the WaterColor Inn now slings its legendary hash for breakfast, too, daily from 7:00 - 10:30 a.m.
The morning menu will showcase Fish Out of Water’s eponymous theme—local food with an eclectic twist. Some of the dishes on the new breakfast menu include Bourbon Vanilla French Toast made with house-baked challa; Shane’s Shrimp & Grits, which combine the restaurant’s famous grits with sautéed fresh gulf shrimp, a poached egg and creamy tomato gravy; and Classic Quiche Lorraine - sweet onions, smoked bacon and gruyere cheese in a flaky pastry crust.Several items are sure to stand out. For house baked goodness, try the restaurant’s bread basket, served with cultured butter, artisanal preserves or Tupelo honey. For a southern favorite, indulge in buttermilk biscuits topped with chocolate gravy, or take on the restaurant’s famous spicy Bloody Mary or fresh mimosa. Kids also get the Fish Out of Water treatment with special menu items like French toast and Anson Mills oats.
